One beam is red light and the other is infrared light. The ratio of red to infrared light is used to determine the oxygen saturation. Regarding being in good cardiovascular shape as related to avoiding altitude issues. The answer is ... being in top physical shape (or having a high level of cardiovascular fitness) helps with performance in all arenas but has no specific advantage for helping pilots adapt to altitude.
